Prosciutto Apple & Gorgonzola Rice Bowl

This bowl has all the savory comfort food indulgences while also feeling very light. It is quick & easy and comforting as all heck.



Cook brown rice. We like to use the instant pot - 1:1 ratio, high pressure for 15 minutes and then natural release for 5. While rice is cooking chop apple, dates, almonds, prosciutto, and gorgonzola. 

Layer ingredients in bowl and top with Honey Mustard dressing. Enjoy!
