Prosciutto Apple & Gorgonzola Rice Bowl

This bowl has all the savory comfort food indulgences while also feeling very light. It is quick & easy and comforting as all heck. INGREDIENTS brown rice green apple almonds dates arugula gorgonzola prociotto Super Belly Honey Mustard Dressing & Marinade DIRECTIONS Cook brown rice. We like to use the instant pot - 1:1 ratio, high pressure for 15 minutes and then natural release for 5. While rice is cooking chop apple, dates, almonds, prosciutto, and gorgonzola.  Layer ingredients in bowl and top with Honey Mustard dressing. Enjoy!

Recipe: Vegan Kale Caesar

I always make extra when tossing this Vegan Kale Caesar salad. It holds up well and makes an awesome side to any meal. It is also a great base to add to throughout the week for easy lunches. INGREDIENTS kale Super Belly Caesar Dressing & Marinade toasted coconut 1 can chickpeas, rinsed & drained avocado oil salt  pepper DIRECTIONS For roasted chickpeas- Preheat oven to 400 degrees. Drain and rinse garbanzo beans. Place on baking sheet and toss with avocado oil, salt and pepper. Roast for 20 minutes, then remove and stir.
